Yummy pancakes

I want to share this super easy and delicious breakfast or lunch with you. I think that at least three or four times a week, I am eating pancakes for breakfast, and I love it :)!


Since January 2021, I am experimenting with different kinds of healthy foods. When I lived in the Netherlands, I used to go to the gym quite often. When the gyms closed, my motivation was hard to find. So, living in Spain now, where the gyms are open, I decided to continue this healthy lifestyle. In my blogs, I hope to inspire you as well. I want to show that eating healthy can be a happy party as well :)!


In this pancake recipe, I used the 'protein pancake mix' of MyProtein. Instead, you could use flour.


Ingredients:

  • 150 ml Coconut milk (I use Alpro sugar-free)

  • 45 gr. Protein Pancake Mix MyProtein

  • 12 gr. Baking soda

  • Toppings (mostly I use frozen fruit and strawberry jam)

How to make it?

  1. Mix the coconut milk and pancake mix in a cup and whisk until it becomes a smooth whole. Add the baking soda, then whisk to combine the three ingredients.

  2. Rest the dough for 2 minutes

  3. Heat a pan and add some olive oil or butter.

  4. Place 2 to 4 small pieces of dough in the pan by using a spoon. The amount of pieces of dough depends on how big you want the pancakes to be or the size of your pan)

  5. Continue this until all the dough has been baked.

  6. Add your favorite topping(s)

  7. A voilà, bon appétit!
